Tea Essentials :: Steeping
All teas require room for the leaf to expand greatly in size as it steeps. Whatever preperation method you use, make sure there is enough room for the leaf to expand up to 3-5 times in size. Making perfect Tea

Hot Tea
1. Use a teapot, preheating by rinsing it out with hot water. This keeps the tea hot during brewing.
2. Bring cold tap water to a full rolling boil (Water that is reheated gives a flat taste) and it will extract the full flavor and benefit from the leaves.
3. Use one teaspoon or one teabag per six ounces of water and pour the boiling water over the tea. 4. Infuse black tea 3-5 mintues. green tea 2-3 mintues, oolong tea 2-5 mintues, white tea 1-2 mintues and herbal's 4-6 mintues. It takes time for leaves to unfold and release their flavor. Experiment to find your brewing zone. If you prefer tea less strong, add water after the steeping period.

Ice Tea
Follow the rules for making hot tea, but use 50% more tea to allow for melting the ice. For example, you would use four teaspoon of leaves to make four cups of hot tea, but to make four glasses of iced tea you need eight teaspoons. To make a 2 quart pitcher full, use this easy method:

1. Bring one quart cold water to a full rolling boil.
2. Immediately add 1/3 cup of loose tea.
3. Stir, cover and let stand five mintues.
4. Stir again and strain into your pitcher holding an additional quart of fresh cold water.

Sun-Tea (cloud free, ice tea)
1. Fill a quart pitcher with fesh tap water.
2. Add eight to ten teaspoons of loose tea or tea bags (remove tags) Cover and let stand at room temperature or in the refrigerator for at least six hours or overnight.3. Stir, strain and serve over ice fill frosty glasses.
